RED RECADO

Ingredients
1/3 annatto seeds
¼ sour orange juice
¼ distilled white vinegar
3-6 garlic cloves, depending on the size
2 ½ tablespoons black peppercorns
8 allspice seeds
8 whole cloves
2 teaspoons dried oregano
2 ½ teaspoons cumin seeds
1 teaspoon kosher salt
Pinch of cinnamon

In a spice grinder combine annatto, cloves, allspice, and peppercorns and pulse to a fine powder. Add the spice blend and all other ingredients to a food processor and blend until a thick paste is formed. Add more sour orange juice to the mixture to achieve desired paste consistency.
Turn paste onto a piece pf plastic wrap and form a log. Store red recado in the refrigerator.
Recado is a Mayan seasoning popular in Belizean Cuisine. It most commonly used to season chicken, fish, and pork. Don't hesitate to use it in other dishes. Just remember a little goes a long way, 1 teaspoon is more than enough for two large chicken breast. ​​
