REFRIED BEANS
2 cups stewed beans with liquid
1/2 medium onion, finely chopped
1/4 cup cilantro, finely chopped
1/4 cup culantro, finely chopped
2 cloves garlic, minced
1/2 teaspoon fresh thyme
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 teaspoon ground allspice
1/4 cup canola oil
Salt and pepper to taste
If culantro is unavailable in your local grocery store remove cilantro and culantro and substitute Goya cilantro/culantro base
Reserve oil. In a medium saucepan combine all other ingredients and simmer for 15-2o minutes. Allow bean mixture to slightly cool. Process in a food blender until smooth. Heat oil in a skillet and add pureed bean mixture. Over medium heat stir occasionally until mixture thickens to a spreadable consistency.
Refried beans can be served warm or cold
For a chunkier texture, use a potato masher in replace of a food processor.
