SHRIMP CEVICHE
Ingredients:

1 lb raw shrimp, shelled and deveined cut into 1/2 inch pieces
4 roma tomatoes, diced
3-4 limes
1 small yellow onion, diced
1-2 jalepeños, deseeded and diced
Salt to taste
Start working with limes by placing them in the microwave for 5-10 seconds. Remove from microwave and rub for a few seconds.
In a large bowl begin squeezing the limes, it should yield about a cup of lime juice. Add chopped shrimp and a heavy pinch of salt, stir and set aside.
Prep the remaining ingredients and add to the shrimp. Thoroughly stir the mixture to ensure everything is incorporated.
Cover bowl and place in the refrigerator overnight to allow the acids to cure the seafood.
Serve with plantain or corn tortilla chips.
