HOMEMADE CORN TORTILLAS
Directions:
Ingredients:
2 cups yellow or white Harina de Maiz (corn flour) *I prefer yellow as it is more popular in Belize
1-1 1/2 cups lukewarm water

Tortilla Press
Two pieces of Parchment paper or plastic (A zip top bag cut in half works well)

Water will vary depending on the humidity.
In a large bowl place Harina de Maiz. Begin slowly adding the water and mixing to form a dough. The consistency should be soft but not sticky.
Over medium heat preheat a cast iron skillet or griddle.
Begin forming the dough into 1 1/2 inch balls. Place a ball between the two pieces of plastic and press with the tortilla press until it is really thin and is about 6 inches.
Place pressed dough onto the griddle and cook for about 35-40 seconds. Flip tortilla and cook on the opposite side for an additional 40-45 seconds.
Place the corn tortilla in a teatowel to keep warm.
Continue process until all the dough is used.
